Admittedly, I haven’t been posting again. The problem being?
I’m not really sure how I’m supposed to blog.
When I started this blog, I had in mind exactly how I wanted portray myself. I wanted to be the kind of girl who was confident, mature, and enthusiastic about everything that life has to offer. That meant that every post would sound like I’m having great fun. Emo posts are so out. Sounds good, huh?
But when I started posting, I realize I don’t always feel like life’s one heck of an awesome journey. Sometimes I’m on a high, and everything seems possible; when I’m on a low, getting out of bed is difficult. I considered writing about the challenges I face, but my pride got into the way. I’m the sort who doesn’t like to admit that my life’s not perfect. Like for example, when Mum and I have our long conversations, I tend to get extremely defensive when she starts to discuss my faults. (I’m trying to improve on that!:) )
That meant feeling very frustrated over the fact that whenever I was feeling down, I still had to write as if I was having a great time. The worst part was it felt as if I was telling you a bunch of lies.
Then last week, I went to Batam (Indonesia) on a short but rather enjoyable holiday. On the first night, I had some issues on my mind, so I went to the Reception Desk to ask for a piece of paper and a pen. I spent 10 minutes writing out all my thoughts. When I reread what I had written, I asked myself, why can’t I blog in the same fashion too? What I had written was straightforward, with no pretense and well, it described exactly how I had felt at that moment.
So I’ve decided to do a revamp of my blog. Rather than just show you one side of me, I want to be like a Julie Powell(I loved the movie!), writing about everything on my blog. So yep!
Anyway, on to the food part! Today’s recipe will be Sugar Cookies. I made these with two of my good friends a while ago. What I love about making these is decorating them. Truthfully, I’m a dang lousy decorator. Blame it on the lack of creative genes:/ Where as my friends C- and S- are a different breed altogether.
I made them with C- and one week later, I made them with S-. S- and I actually planned to make rainbow cookies, but then we kinda failed As you can see from above(first picture), the different coloured icings ran into each other, creating the kind of rainbow that you see in oil slicks.
Classic Sugar Cookies
The Cookies Bible
For the cookies,
1 cup CRISCO Butter flavour all vegetable shortening
1 1/2 cups granulated sugar
1/2 cup brown sugar
2 tbsp milk
1 tsp vanilla
1 1/2 tsp baking soda
1 1/2 tsp cream of tartar

- Combine 1 cup shortening, granulated sugar and brown sugar in a large bowl. Beat with electric mixer on medium speed until light and fluffy. Add eggs, beating them in one at a time. Add vanilla.
- Combine flour, baking soda and cream of tartar. Add to shortening mixture in three batches, beating well after each addition. Divide mixture in to three parts, shape them into a disk and wrap each in cling wrap. Chill them for an hour. (they can also be frozen. for about 3 months i guess?)
- Preheat oven to 350F/170C
- Roll out one of the three disks until about 1/4 inch thickness( Don’t roll them too thin. If you do, it makes it VERY difficult to transfer them to the baking sheet). Cut out desired shapes and place them on a piece of parchment paper. Bake for about 5-6 minutes, or until cookie edges are slightly golden brown. Cool completely before decorating.
For the icing,
4 cups icing sugar, sifted
4 tbsp milk
food colourings ( i used red, blue, yellow and got the other colours by mixing)
- Gradually add milk to the icing sugar. Mix until the mixture can flow and is easy to spread and work with.
- Using toothpicks, dip them into the colourings and use the toothpicks to mix the colour into the icing.
